Ingredients
1 head of cabbage, chopped
4 green onions, chopped (or ½ cup white onions, diced)
2 Tbsp. butter or margarine
2 pkgs. Ramen Noodles (oriental or chicken flavors work best)
½ Tbsp. sugar
1/3 c. rice vinegar
¼ c. vegetable or canola oil
½ tsp. salt
½ tsp. pepper
1 c. slivered almonds
½ c. sesame seeds (use more or less to taste)
Directions
Mix cabbage & onions together & set aside.
In a skillet, sauté almonds, crushed Ramen noodles, & dry Ramen seasoning mix in
butter or margarine and when slightly golden brown add sesame seeds (these brown
quickly so be careful). Set aside.
In a shaker jar combine the sugar, vinegar, salt & pepper. Shake until salt & sugar
are dissolved. Add the oil and shake vigorously. Just before serving combine all ingredients.
Serves 8-10.
Note: this can be made ahead if you refrigerate the dressing and cabbage/onion mix
separately. However, do not refrigerate the noodle mix. Once noodle mix has cooled
completely store it in an airtight container.
